In addition, the preparation of the caviar takes place at + 15 ° C - + 40 ° C with a permanent contact for several hours with air containing microbes, so that it is possible that the product is contaminated by a microflora pathogenic or pathogenic under certain conditions, because of which the shelf life of the product decreases.
The closest analog of the invention is a device for producing black caviar comprising an initial mixing vessel of components having outlet pipes with jet mixing tops, a source of gas pressure connected to the initial mixing vessel components, a cylindrical - granulator vessel for forming granules forming the pipe for overflowing excess formation liquid which is installed coaxially with the initial mixing vessel of the components before the outlet pipes. In addition, water jackets are installed around the cylindrical container - granulator for their heat stability, and storage is provided for the collection of prepared granules placed at the bottom of the container - granulator (USSR Certificate of Authorization No. 1782523 , MAD A23L 1/328, 1992).
The defect of this device is also that a large amount of granules deviating from standard sizes is obtained, which requires another adjustment of the caviar granules and deteriorates the finished product. The difference in size of the granules is conditioned by the fact that the initial mixture flow entering the oil is cut into granules which remain in chaotic motion for a long time, bump into each other, stick to each other under conditions of temperature (86-90 ° C) which favors the uncontrollable modification of the shape and size of the granules. The present invention therefore proposes a device for producing a granular food product, such as a caviar substitution product. The device comprises an initial component mixing vessel provided with outlet pipes with jet mixing tops, a gas pressure source connected to the initial mixing vessel of the components, a cylindrical-granulator vessel, water jackets, and a collector of the prepared granules, the initial mixing vessel of the components having a heater. The device is adapted to the formation of spherical granules and the setting up of the main steps of the preparation of the granular caviar substitution product, in particular to the formation of spherical granules with a diameter of 2-3.5 mm from a mixture of proteins. Other steps in the production of caviar, such as, for example, coloring, painting, taste improvement can be carried out in common containers or in specific containers in known ways.
The device works as follows.
An initial mixture is prepared, which is a mixture of a proteinaceous colloid solution, for example milk, and jelly. To this end, jelly is added to boiling water and cooled, mixed with it and left for 90 minutes, then boiled milk and cooled to a temperature of 50 ° C is added. The initial mixture passes from the device for dispensing the mixture. in a semi-tubular receiving device 10 by means of droppers 6, connected to the initial mixture dispensing device 5. After falling into the hot oil, the drops of the initial mixture in the semi-tubular receiving device 10 are formed and the granules are obtained. They are distributed by the flow of oil and appear in a collector of prepared granules 11.
The collector of prepared granules 11 comprises a net 12 whose vegetable oil is always separated, cooled in a second heat exchange device 4 at a temperature below 15 ° C., directed towards the semi-tubular receiving device 10, returned to the collector 11 by a second centrifugal pump 9. A flow of oil, synonymous with efficiency, is thus achieved.
When a net 12 is filled with prepared pellets, it is removed from the collector without interfering with the operation of the device, since the pellets continue to be collected in the next net. More than 10 threads can be placed in the granule collector 11. The capacity, as well as the length of the initial mixture dispensing device 5, the width and the length of the semi-tubular receiving device 10 are conditioned by the efficiency required.
The device can be placed in a sealed case to reduce the risk of contamination of the product by a pathogenic or pathogenic microflora under certain conditions during production.
The invention can be used in small scale food industry companies for the reception of small volumes of caviar as well as in large scale companies whose production of caviar is important.
